Adam Liaw’s cheat’s maritozzi
Soft white rolls from the Asian bakeries we have all over Australia make fantastic substitutes for maritozzi rolls.
Ingredients
300ml thickened cream
50g icing sugar, plus extra for dusting
10 Asian-style soft dinner rolls or brioche rolls
2 tbsp marmalade
Method
Step 1
Whip the cream and icing sugar together until firm peaks form and refrigerate until ready to serve.
Step 2
Split the bread rolls in half from the top, but don’t cut them all the way through. Spread the rolls with marmalade, then fill with the cream mixture so the rolls hold open like maritozzi. Use a butter knife to smooth off any excess cream. Dust with icing sugar and serve immediately.
Adam’s tip: Many of the dishes we consider Italian – pizzas, bologneses and parmigianas – are Italian-American adaptations that became popular here in the 1960s and ’70s.
